If you’ve been keeping up with me on Instagram, you know I’m in New York on a work trip right now! Packing for (and being in) a foodie city has me thinking about my one of my favorite things in the whole world:
A bowl of pasta.
God’s gift to single women. And everyone else. But, especially us.
‘Single Girl Recipes’ have to meet some pretty special qualifications around here, which you’ll be familiar with if you’ve read this past spring’s 5 Amazing Single Girl Recipes or The 2017 Single Girl’s Guide to Summer Party Snacks, from this past Wednesday.
- They’ve gotta be quick.
- They’ve gotta be cheap.
- They’ve gotta be sorta semi-healthy.
- They don’t make way more food than you need.
With those things in mind, here’s a roundup of our favorite Single Girl pasta recipes!
1. The Perfect Summer Pasta
It is in fact perfect. It’s super light and easy to portion out, if you don’t want to make enough for leftovers. The base is olive oil, a mix of light grated cheeses with some parsley thrown in, some pepper and red pepper flakes for a lil’ zing, and you’re done. Gimme.
2. The Best, Easiest, Yummiest Alfredo Sauce.
This one is from my pals at A Beautiful Mess. They aren’t actually my pals since I’m more like a fangirl, but anyway, I’ve been referring back to this recipe for about 4 years. The base is greek yogurt, which makes it lower in fat and less heavy than traditional Alfredo sauce, while still just as easy to whip up.
I usually make this with shells, and it makes enough sauce for a full box of pasta. Make sure you are prepped for leftovers or cooking for several buds.
3. Grown-Up Kraft Mac ‘n Cheese
This one is easy. Buy your $0.99 Kraft box but don’t forget that you’re better than the powder.
Repeat after me: You are better than the powder.
I still use the stuff, but I also add any other cheese I have in the fridge. Shredded cheddar cheese, parmesan, and actual cream cheese are some of my favorites. All of the sudden, you’re eating something real!
4. Rachael Ray’s “You Won’t Be Single For Long!” Vodka Cream Sauce
Guys, this one is something else.
When I lived in Boston I befriended a nearby family that started inviting me over for dinner on a weekly basis. This was before I had a ton of friends, so those Wednesday night dinners became almost sacred to me. Mom-of-the-House, my dear friend Hilary, quickly figured out that I devoured this pasta and made it all the time. Oh, the memories.
Try it with shells or penne and try not pass out, in awe of your own pasta prowess.
What gives it it’s zing? Pink wine.
5. Spaghetti with Zucchini, Lemon, and Parmesan
Here’s another light, summer-y one. But it also includes zucchini, which happens to be my favorite summer veggie.
(Okay, I think it’s just my favorite veggie period.)
